Thanksgiving Desserts Everyone Can Be Thankful For!

1. Pecan Pie Bars

If you aren’t a fan of pumpkin pie, we have another recipe for you. This is a twist on pecan pie, which will delight your guests.

Crust Ingredients:

  • 1 cup of coconut flour
  • 1/4 tsp. of salt
  • 3 tbsp. of maple syrup
  • 1/3 cup of coconut oil
  1. Preheat the oven to 350 degrees and grease an 8×8″ pan with coconut oil. Blend the maple syrup and coconut oil completely, stir in coconut flour and salt until the mixture is smooth. Transfer the dough into the pan and bake it until it is a golden brown color.

Pie Filling:

  • 3/4 cup of coconut sugar
  • 1/3 cup of maple syrup
  • 1/3 cup of melted coconut oil
  • 1/3 cup of milk
  • 2 tablespoons of flax meal
  • 2 teaspoons of tapioca flour
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1 1/4 cup of toasted and chopped pecans
  1. In a saucepan, combine coconut sugar, maple syrup and coconut oil over medium heat. Stir while bringing it to a low boil. After it begins boiling, have it simmer for around 3 minutes and then remove it from the heat.
  2. When it’s done cooling, stir milk, flax meal, tapioca flour, vanilla extract and salt in a bowl. Whisk it in with the sugar mixture and add the pecans.
  3. Add the pecan mixture over the crust and bake it for an additional 30 minutes. Then transfer it to the refrigerator and leave it there for two hours before cutting into pieces.

2. Pumpkin Pie

You can’t have Thanksgiving dessert without pumpkin pie. This is a classic pumpkin pie that your guests will love.

Crust Ingredients:

  • 1 1/4 cups of rice flour
  • 1 tbsp. of sugar
  • 1/2 tsp. salt
  • 1 tsp. xanthan gum
  • 6 tbsp. cold butter
  • 1 egg yolk
  • 1 tbsp. of apple cider vinegar
  • 5 tbsp. of water
  1. First add the flour, sugar, xanthan gum, and the salt into a food processor. Afterward, add the butter and increase the speed to medium, until it looks like crumbs. If you don’t have a food processor, use a whisk to blend the ingredients together.
  2. Beat the egg yolk with vinegar and 3 tbsp. of water. While the food processor is going, or you are mixing the ingredients in a bowl, add the egg mixture and mix it until it is blended into the dough. Add more water if needed.
  3. When the dough is blended and has come together, remove it and flatten it into a disk. Then, cover it and set it aside in the refrigerator for it to fill. Let it rest for 30 minutes.

Pie Filling:

  • 2 3/4 cups of pumpkin puree
  • 1/4 cup of maple syrup
  • 1/4 cup of brown sugar
  • 1/3 cup of unsweetened plain almond milk
  • 1 tbsp. olive oil
  • 2 1/2 tbsp. of cornstarch or arrowroot powder
  • 1 3/4 tbsp. mix of ginger, cinnamon, nutmeg, and cloves
  • 1/4 tbsp. of sea salt
  1. Add all the ingredients into a blender and mix until it is completely smooth. Set it aside, and preheat the oven until 350 degrees. Then it’s time to take out the crust. After it has chilled enough, place it on wax paper and use a rolling pin to spread it out. Then, place it into the pan and use your fingers to get the crust up against the sides of the pan.
  2. Pour the filling into the crust and bake it for about an hour. The crust should be a light golden brown and the filling would have a few cracks on top. When you take it out, let it cool completely before covering and moving it to the fridge to let it rest overnight.

3. Baked Brie with Apples

Baked brie is a great appetizer to have for guests. This dessert tastes great with whipped cream and other fruits added.

Ingredients:

  • 1/4 wedge of a large wheel
  • 1/2 cup of chopped and toasted pecans
  • 2 tbsp. of honey
  • 1/8 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • Sliced apples
  • A sprinkle of lemon juice
  1. Preheat oven to 375 degrees. Cover the baking sheet with foil before placing the brie on top. Mix the pecans, honey, nutmeg, and cinnamon together in a bowl before spreading the mixture on top of the brie.
  2. After the oven is done preheating, bake it for around 10 to 15 minutes, or until the cheese begins to melt.
  3. Sprinkle lemon juice over the sliced apples to prevent them from turning brown, and then serve them on a dish with the brie.

Whichever dessert you decide to make, we hope you enjoy Thanksgiving with your family!
